Ingredients

  • 3 Packs Gelatin
  • 1 Cup Water
  • 1 ½ Cups Granulated Sugar
  • 1 Cup Light Corn Syrup
  • ¼ Tsp Kosher Salt
  • 1 Tsp Vanilla Extract
  • ¼ Cup Powdered Sugar
  • ¼ Cup Cornstarch

Steps

  1. Place gelatin into mixing bowl with 1/2 Cup of water.
  2. In small saucepan combine remaining water, granulated sugar, corn syrup, and salt. Place over medium-high heat, cover and let cook for 3-4min. Uncover and test temp until reaching 240F. Remove from heat immediately.
  3. Pour sugar syrup slowly into gelatin mix while mixing together. Once all syrup is in, whip the mixture until it becomes thick and lukewarm, aproximately 12-15min. Add vanilla (or sub maple syrup) during last minute of whipping.
  4. Combine confectioners sugar and conrstarch in small bowl. Lightly spray a 13×9 baking pan with non-stick spray. Add the mixture and move to coat bottom and sides of pan. Pour the marshmallow mix into pan and spread. Let sit uncovered for 4hrs.
  5. Turn marshmallow sout onto cutting board and cut into 1in squares using pizza cutter dusted in confectioners sugar mixture. Can store in airtight container up to 3 weeks.
