- ½ lb Penne Pasta
- 1 Small Onion, Diced
- 2 Cloves Garlic, Minced
- 1 Tbsp Olive Oil
- 15 oz Diced Tomato
- ½ Tsp Oregano
- ½ Tsp Basil
- Pinch Red Pepper Flakes
- ½ Tsp Salt
- Black Pepper
- 2 Tbsp Tomato Paste
- 2 oz Cream Cheese
- ¼ Cup Parmesan Cheese
- 4 ½ oz Spinach

Steps
- Bring a large pot of water to a boil over high heat. Add the pasta and cook until tender (7-10 min).
- Cook both the diced onion and minced garlic in a large skillet with olive oil on medium-low heat until caramelized. Then add the diced tomatoes (with juices), oregano, basil, red pepper flakes, salt, and black pepper. Stir to combine, add the tomato paste and 1/2 Cup of water to the skillet, then stir until the tomato paste is dissolved into the sauce.
- Turn the heat down to low. Cut the cream cheese into a few pieces and then add them to the skillet along with the spinach. Use a whisk to stir the sauce until the cream cheese has fully combined. Let sit with lid on for 3-5min.
- Pour the pasta into the skillet and stir to mix with the sauce. Serve, and top with parmesan and spinach.
